Cottage Cheese Perogies

Would you like to make a light,  healthy meal that is high in protein,  delicious and easy to prepare?

Try this recipe of Cottage Cheese perogies

How to prepare it:

Measure 500 gr of cottage cheese without any additives.

Add 2 eggs and mix well.

Add 2 tbsp olive oil - preferably first cold pressed extra virgin olive oil, 1 tbsp plain yogurt or kefir and continue mixing together.

Add 160 gr of durum semolina, a bit of natural vanilla extract, peel of 1 organic lemon.

Mix all ingredients until well combined.

Shape the perogies into round balls with your hands and place them on a plate/tray. Let them rest for about 1 hr in the fridge

Add them to boiling water and boil them for about 5 min after they rise to the top of the boiling water in the pot.

Drain the water, then mix the perogies with unsweetened shredded coconut or ground bread crumbs.

Serve warm. Add  yogurt or  your choice of topping. Enjoy
